Chicken casserole with broccoli

Ingredients:

  • 2 cups cooked chicken breast, shredded or cubed
  • 4 cups broccoli florets (fresh or frozen, steamed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika (optional)
  • 1/2 cup breadcrumbs or crushed Ritz crackers (optional)
  • Salt and pepper to taste
  • 1 tbsp butter (melted, if using breadcrumbs or crackers)

Instructions:

  1. Preheat the oven: to 375°F (190°C). Grease a 9x13-inch casserole dish.

  2. Steam the broccoli: If you're using fresh broccoli, steam or blanch the florets until tender but still bright green. If you're using frozen, thaw and drain excess moisture.

  3. Prepare the sauce: In a medium bowl, mix the cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, pepper, and half of the shredded cheddar cheese. Stir until well combined.
